This dish is deliciously spicy and slightly sweet at the same time. Decorate a simple plate of rice with this lovely orange coloured curry with papaya. Curry, like it is meant to be.

Ingredients

  • ½ EAT ME golden papaya
  • 1 EAT ME cayenne pepper
  • 1 EAT ME lime
  • 1 onion
  • 1 clove garlic
  • 100 g salted peanuts
  • 250 g crème fraîche
  • 350 g chicken breast
  • ½ tbsp. curry powder
  • 100 ml sunflower oil
  • Salt & pepper
  • Tabasco

Let's get to work

Preparation
  1. Cut the chicken breast into small cubes.
  2. Finely slice the garlic and the onion. Halve the cayenne pepper and remove the seeds, cut very fine.
  3. Cut the lime in half. Squeeze the juice from the fruit.
  4. Cut the papaya in half vertically. Remove the seeds with a spoon. Cut 1 papaya half into cubes and store the other half in the fridge.
  5. Sprinkle the diced papaya with the lime juice.
  6. Heat the sunflower oil in the pan and fry the onion. Add the garlic, pepper and curry powder.
  7. Add the chicken breast and season to taste with salt and pepper.
  8. Stir in the crème fraîche and let it simmer.
  9. Gently mix the diced papaya and the peanuts through the mixture.
  10. If you prefer a spicier flavour add a few drops of Tabasco.

Tip

Combination tip: Serve with white rice or pita bread.
