This tropical desert is a delight for the eyes as well as the mouth. The beautiful looking kiwano is perfect to use as a bowl to serve the mousse in.


  • 2 EAT ME kiwano
  • 200 ml cream
  • 4 tsp. sugar
  • 2 sheets of gelatine

Let's get to work

  1. Cut the top of the kiwano and scoop out the pulp.
  2. Sieve the pulp and set the juice and the seeds aside.
  3. Soak the gelatin in cold water for about 5 minutes. Pour the kiwano juice in a saucepan
    and add the soaked gelatin and the sugar. Bring this almost to the boil.
    Let it cool down in a sink filled with cold water for about 10 minutes.
  4. Whip the cream until it has a yoghurt- like thickness.
  5. Add half of the kiwano seeds, the ones you had set aside, to the kiwano-gelatin mixture.
  6. Fold the cream through the thoroughly cooled kiwano-gelatin mixture until it becomes a mousse.
  7. Fill the hollow kiwano with the kiwano mousse.


Decorate the filled kiwano with colourful summer fruit for an extra colourful recipe.
