Desserts are delicious but they often contain a lot of sugar. Sometimes it's nice to enjoy a delicious dessert without feeling guilty. Then try this cheesecake made with Greek yoghurt and a nice cranberry compote.



  • 300 g EAT ME dates
  • 100 g walnuts
  • 150 g almond flour
  • 2 tbsp. coconut oil
  • 1 tbsp. coconut blossom sugar


  • 500 ml Greek yoghurt
  • 1 vanilla pod
  • 2 tbsp. honey
  • 5 gelatine leaves
  • 10 ml milk

Cranberry compote

  • 340 g EAT ME cranberries
  • 1 EAT ME lime
  • 4 tbsp. honey
  • 1 tsp. cinnamon
  • 10 ml water
  • ½ tsp. vanilla sugar

Let's get to work

  1. Start with the bottom, pit the dates and finely cut these together with the walnuts. Melt the coconut oil in a saucepan and mix once it has melted with the dates, walnuts, almond flour and coconut blossom sugar. Place in the bowls and press down firmly with a spoon.
  2. Continue to make the filling, soak the gelatine leaves in cold water. Scrape the vanilla seeds from the vanilla pod and heat along with the milk and honey in a small saucepan. Bring it close to a boil.
  3. Add the gelatine leaves and stir continuously until the gelatine is dissolved. Then remove the pan from the heat and place the pan in cold water. After 15 minutes add the milk to the Greek yoghurt and mix well. Put the Greek yoghurt into the bowls and leave in the fridge for at least an hour.
  4. Rinse the cranberries and cut the lime in half. Squeeze the juice from the lime. Make the cranberry compote by putting the cranberries, water, lime juice, vanilla sugar, honey and cinnamon together in a saucepan and on a low heat bring to the boil. Leave to simmer for 3 minutes and remove the pan from the heat. Cool the cranberry compote back down to room temperature.
  5. Take the bowls out of the fridge and scoop the cranberry compote on top, as much or as little as you like.
