  • Colourful sweet potato fries with avocado dip

These fries are finger licking good. The fries look so appealing because of the different coloured sweet potatoes. Try them with the avocado aioli and enjoy!


  • 1 kg EAT ME coloured sweet potatoes
  • 1 EAT ME avocado
  • 2 tbsp. olive oil
  • 2 tbsp. mayonnaise
  • 1 clove garlic
  • sea salt & pepper

Let's get to work

  1. Preheat oven to 200 °C.
  2. Wash the sweet potatoes and cut into long, equal size fries.
  3. Place the fries on a baking tray and drizzle with olive oil.
  4. Bake the fries until crispy in about 20 minutes.
  5. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone, spoon the flesh out and put in a blender
  6. Add the mayonnaise, the crushed garlic and pepper to the avocado and mix until smooth.
  7. Remove the sweet potato fries from the oven and sprinkle with sea salt
