Papaya curry

Preparation method

  1. Cut the chicken fillet in small pieces. Finely chop the garlic and chop the onion. Halve the cayenne pepper in the length, remove the seeds and cut the pulp finely.
  2. Squeeze the lime. Scoop the seeds out of the papaya with a spoon. Remove the skin, cut the flesh into 1.5 cm pieces. Drizzle with the lime juice.
  3. Heat the sunflower oil and fry the onion with the garlic, cayenne pepper and curry madras for 3 minutes. Add the chicken fillet and stir fry for 5 minutes until the chicken is almost done.
  4. Stir in the crème fraîche and cook over low heat for 2 minutes. Spoon the papaya in carefully. Season with salt and pepper. Add some more Tabasco to taste. Sprinkle with the peanuts.

Tip: Delicious with roughly chopped fresh Thai basil and / or coriander.
