Rambutans are sweet, but that doesn't mean they only have to be used in sweet dishes. Marinate rambutans in fresh, Asian flavours for fabulous results.
Slice around the rambutans and remove the skin and the stone.
Halve the cayenne pepper lengthwise, remove the seeds and finely slice the flesh. Add to a mixing bowl with the rambutans and ginger syrup.
Scrub the lime, zest the green skin and squeeze the juice. Stir the zest and juice through the rambutans and leave to marinate in the fridge for at least 1 hour.
