Preparation method

  1. Cut the mango into two halves along the stone or use a melon slicer. Remove the skin and slice the flesh of one half lengthwise into 12 slices. Score the other halves into squares without cutting through the skin. Turn out the halves with your thumb and slice off the cubes.
  2. Squeeze the lime. Purée the mango cubes with the lime juice and orange juice in the blender or with the hand blender to create a smooth soup.
  3. Divide the soup over 4 bowls. Garnish each bowl with 3 slices of raw ham, 3 slices of mango and 2 salad leaves.
