Did you know that you can cook fish by putting it in lime juice? This is how you make cod ceviche. The freshness of the lime is a perfect combination with the sweet and sour passion fruit. A real flavour bomb on your plate.
Thinly slice the cod and layer them in a flat dish allowing them to slightly overlap. Halve the passion fruit and place the pulp in a bowl. Squeeze the limes and add the juice to the passion fruit pulp. Add the honey and mustard. Keep 4 tablespoons of the dressing aside and pour the rest over the cod. Cover and leave to marinate in the refrigerator for at least 1 hour. The acid of the lime will gently cook the cod.
Quarter the tomatoes and remove the seeds. Cut the flesh into cubes and chop the chives.
Divide the cod among 4 plates, pour the rest of the dressing on top. Then add the tomatoes, chives and salt and pepper to taste. Garnish with the flowers and cress if desired.
