Avocado can be prepared in many different ways. The taste is soft and creamy, perfect for making a mousse! Delicious with smoked chicken or turkey and a fresh, tart apple.
Cut the avocados all the way around the stone. Twist the two halves apart. Remove the stone and scoop the flesh out of the skin. Slice the flesh into chunks. Squeeze the lime. Roughly slice the garlic and the shallot.
Put the avocado, garlic, shallot, lime juice and crème fraîche into the blender, or blend with the hand blender until you have a smooth mousse. Season with salt and pepper.
Slice the chicken or turkey, apple and sweet pepper into small cubes.
Divide the avocado mousse over four glasses or bowls. Spoon over the chicken or turkey, apple and sweet pepper. Garnish with a lettuce leaf.
