How about giving the classic creme brûlée a tropical twist by adding passion fruit?


  • 4 EAT ME passion fruit
  • 250 ml milk
  • 250 ml cream
  • 100 g + 4 tbsp. sugar
  • 4 eggs
  • 1 vanilla pod

Let's get to work

  1. Preheat the oven to 125 °C.
  2. Scrape the seeds out of the vanilla pod and bring, together with the milk, whipped cream and 50 grams of sugar to the boil. Gently simmer for about 3 minutes.
  3. Remove the pan from the heat and let it cool down.
  4. Separate the eggs and put the egg yolks, together with the other 50 grams of sugar, in a bowl. Beat well.
  5. Then add the warm cream to the eggs and whisk until the mixture gets thicker.
  6. Cut the passion fruit in half and scoop out the pulp. Mix the pulp through the mixture.
  7. Then place in the bowls.
  8. Place the bowls in an oven dish and fill this dish with water until 2/3 of the sides of the bowls are under water.
  9. Place the oven dish in the oven and remove after about 60 minutes, then allow the creme brûlée to cool in the fridge for at least of one hour.
  10. Sprinkle 1 tablespoon of sugar on each creme brûlée and use a torch to caramelize it.
