Are you also a guacamole fan? Guacamole is not only used as a dip but it can also be used in a meal. Keep the guacamole a bit on the coarse side for a nice bite!

Ingredients

Burgers

  • 1 EAT ME avocado
  • ½ EAT ME cayenne pepper
  • 400 g chicken mince
  • 1 shallot
  • 1 clove garlic
  • 1 tbsp. chicken spices
  • 100 g bread crumbs
  • ½ tbsp. cumin powder
  • ½ tbsp. chilli powder
  • ½ tbsp. curry powder
  • chopped iceberg lettuce
  • 4 bread rolls

Tomato Salsa

  • 3 sprigs of EAT ME parsley
  • 4 tomatoes
  • 1 red onion
  • ½ tsp coriander
  • 1 tsp sugar
  • 1 tsp. paprika powder
  • 2 tbsp. olive oil
  • salt and pepper

Let's get to work

Preparation
  1. Heat the barbecue.
  2. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone with a spoon. Peel the avocado or scoop the flesh out. Then cut the flesh in cubes.
  3. Rinse the cayenne pepper and slice finely. Chop the onion and crush the garlic with a garlic press.
  4. Mix the chicken mince with the avocado, the shallot, garlic, cayenne pepper, bread crumbs, cumin powder, chilli powder and curry powder. Make 4 burgers.
  5. Grill the guacamole burgers on the barbecue for about 12 minutes until done.
  6. Cut the tomatoes and the red onion into coarse pieces and mix together with the parsley and olive oil in the kitchen machine. Press the pulse button a number of times until you have a coarse salsa. Bring to taste with coriander powder, paprika powder and pepper and salt.
  7. Take the burgers off the barbecue and serve on a bread roll with iceberg lettuce and tomato salsa.
