Do you like international foods and foreign recipes? Let the tasty flavours of this traditional South African oven dish surprise you and make it even more exotic with mango.

Ingredients

  • 1 EAT ME mango
  • 2 sprigs of EAT ME coriander
  • ½ EAT ME cayenne pepper
  • 1 slice of white bread
  • 100 ml chicken stock
  • 1 onion
  • ½ tbsp sunflower oil
  • 400 g minced beef
  • 125 ml sour cream
  • 1 egg
  • 1 tbsp curry powder
  • 1 tbsp herb vinegar
  • 2 cloves of garlic
  • pepper & salt

Let's get to work

Preparation
  1. Pre heat oven to 180 ˚C.
  2. Cut the bread in cubes and soak them shortly in the chicken stock.
  3. Cut the onion and the garlic finely.
  4. Cut the mango along the stone or use a mango cutter. Then cut the seedless flesh into slices
    without touching the skin. Then scoop the slices from the skin, keep 8 slices aside for garnishing.
    Cut the other slices in pieces.
  5. Rinse the cayenne pepper and remove the seeds. Cut half the pepper into very fine pieces.
  6. Heat the sunflower oil in a frying pan and fry the onion, garlic and cayenne pepper
    on a medium heat for 5 minutes. Cook the mince for about 4 minutes in the same pan.
    Season to taste with salt and pepper.
  7. Spoon the mince in an oven dish and arrange the mango slices, the ones you kept aside,
    into a flower shape.
  8. Rinse the coriander.
  9. Beat the sour cream, egg and coriander leaves together. Season to taste with salt and pepper
    and pour over the top of the mince.
  10. Bake the Bobotie in 25 minutes until brown.
