It is more fun to make your own pastry, but this is often quite complicated. Give these blackberry cakes a try. The sweet cream goes well with the fresh and tangy blackberries.


  • 125 g EAT ME blackberries
  • 8 sprigs EAT ME mint
  • 4 sheets of puff pastry
  • 100 g pastry cream
  • 1 egg

Let's get to work

  1. Preheat oven to 200 °C. Cut or slice a circle out of the puff pastry sheets and place on a baking tray.
  2. Whisk the egg and brush some on the puff pastry rounds.
  3. Bake the puff pastry for about 15 minutes and allow to cool.
  4. Cut the puff pastry right through and put the pastry cream on the bottom.
  5. Rinse the blackberries and place on the pastry cream. Put the top of the puff pastry on the cake.
  6. Garnish with a sprig of mint.
