Great for parties or when people come to visit: chicken satay. Everyone loves it. How about trying a different marinade for a change? Perhaps this marinade with fresh tamarind for example.

  • 3 EAT ME tamarind pods
  • 1 EAT ME lime
  • 2.5 kg diced boneless chicken thighs
  • 10 ml of soy sauce
  • 10 ml hot water
  • 2 cloves of garlic
  • 1 tsp. turmeric
  • 10 ml sesame oil
  • 1 tbsp. cane sugar
  • 1 tsp. salt

Let's get to work

  1. Remove the shell from the tamarind and soak the contents of the pods in the hot water. Let it soak for 10 minutes, then remove the black seeds.
  2. Crush the garlic with a garlic press and place in a mixing bowl. Add the soy sauce, turmeric, the cane sugar, sesame oil, salt and tamarind water and stir until you have a smooth marinade.
  3. Divide the marinade over the chicken and let it marinate for at least 1 hour in the fridge.
  4. Remove the chicken from the fridge and preheat the oven to 220 °C.
  5. Then thread the chicken on the skewer and bake for about 15 to 20 minutes in the oven.
  6. Serve with peanut sauce and other Middle Eastern garnishings.
