Rösti is a tasty side dish, originally made from potatoes, but it is perfect to replace with sweet potato. Various soft vegetables can be added to taste.


  • 600 g EAT ME sweet potato
  • 100 g shiitake
  • 1 clove garlic
  • 2 spring onions
  • 3 eggs
  • ½ tsp. paprika powder
  • 2 tbsp. olive oil
  • salt and pepper

Let's get to work

  1. Peel the sweet potato, grate it and put in a mixing bowl.
  2. Thinly slice the shiitake. Fry the shiitake in a frying pan until golden brown and add to the grated sweet potato.
  3. Rinse and finely slice the spring onion. Add to the grated sweet potato.
  4. Squeeze the garlic and add it to the mixture along with the paprika and the eggs.
  5. Mix everything together well.
  6. Heat the olive oil in a frying pan and scoop several heaps of the sweet potato mixture into the pan. Fry the rösti over medium heat on both sides for about 5 minutes.
