How about a vegetarian main dish for Christmas this year? Make a delicious vegetarian-filled butternut squash. Doesn't it look beautiful?


  • 1 EAT ME butternut squash
  • 100 g EAT ME shiitake
  • 100 g chestnut mushrooms
  • 1 kg spinach
  • 1 egg
  • 2 shallots
  • 2 tbsp. olive oil

Let's get to work

  1. Put the butternut squash in a pan of water and allow the butternut squash to cook gently for about 1 hour and then allow to cool for half an hour.
  2. Preheat the oven to 120 °C.
  3. Dice the shallots and cut the mushrooms and shiitakes into thin slices.
  4. Heat the olive oil in a pan and fry the shallots, then add the mushrooms and shiitake. Add the spinach a little at a time and let the spinach wilt, season with pepper and salt.
  5. Remove the baked vegetables from the pan and beat the egg, mix it together.
  6. Halve the butternut squash lengthwise and remove the seeds with a spoon. Also spoon some of the flesh out.
  7. Divide the spinach mixture over one half of the butternut squash and close it with the other half.
  8. Tie the butternut squash with kitchen string.
  9. Roast the butternut squash for about 1 hour in the oven and leave for 10 minutes before cutting.
