  • Small Charlotte cake with blueberries

Have you ever heard of Charlotte cake? This cake is wrapped with lady fingers, really delicious! We made a single serving. Just as great! Perfect for Christmas, Easter or any dinner party!


  • 250 g EAT ME blueberries
  • 1 EAT ME lime
  • 250 ml cream
  • 20 ml water
  • 80 g sugar
  • 4 gelatine leaves
  • 2 packets of lady fingers

Let's get to work

  1. Halve the lime and squeeze the juice from the fruit.
  2. Rinse the blueberries and add 150 grams of blueberries to the lime juice, the water and the sugar and bring to the boil, then remove from the heat.
  3. Soak the gelatine leaves in cold water.
  4. Puree the boiled blueberries and add the soaked gelatine leaves and stir until completely dissolved. Leave to cool down.
  5. Whip the cream until it has a yoghurt-like consistency.
  6. Mix the blueberry puree with the whipped cream as soon as it begins to set.
  7. Cover a ring or cup with cling film and place the lady fingers with the sugary side facing outwards against the ring. Fill the inside with 2/3 with the blueberry mousse.
  8. Put in the fridge for at least 1 hour.
  9. Then remove the Charlottes from the moulds and divide the remaining blueberries over the top of the Charlottes.
