  • Pavlova with lychees and raspberries

Is there anything more beautiful and delicious than a pavlova? This pavlova has a double layer which makes it a real show stopper. The combination of the fresh yoghurt, sweet Pavlova and the soft fruit is perfect!


  • 250 g EAT ME raspberries
  • 20 EAT ME lychees
  • 1 EAT ME lime
  • 15 g EAT ME mint
  • 500 ml Greek yoghurt
  • 200 g egg white (pasteurized)
  • 300 g sugar
  • 1 tbsp. cornflour

Let's get to work

  1. Preheat oven to 125 °C.
  2. Use a lemon to degrease the mixer and the bowl.
  3. Beat the egg whites firmly and slowly add the sugar.
  4. Cut the lime in half and squeeze the juice from the fruit.
  5. Mix the cornflour with the lime juice.
  6. Add the cornflour mixture to the egg whites and whisk them well for another 3 minutes.
  7. Use a piping bag to pipe two round slices (about 30 cm) on a baking tray lined with baking paper.
  8. Bake them in the oven for approximately 2 hours. Let them cool down afterwards.
  9. Peel the lychees and remove the seed.
  10. Rinse the raspberries and mash half of them with a fork. Add the Greek yoghurt and mix together.
  11. Take 1 round slice and put half of the raspberry yoghurt on it. Place the second pavlova on top.
  12. Divide the remaining half of the raspberry yoghurt. Garnish the pavlova with the rest of the raspberries, lychees and mint.
