Festive and delicious! Surprise your guests with this light and beautiful dessert.

Ingredients

  • 500 g EAT ME lychees
  • 250 g EAT ME blackberries
  • 3 EAT ME limes
  • 1 dl apple juice
  • 1 tbsp. grated coconut
  • 1 tbsp. coconut syrup
  • 75 g sugar

Let's get to work

Preparation
  1. Peel the lychees and remove the seed from the fruit.
  2. Cut the 2 limes in half and squeeze the juice from the fruit.
  3. Puree the lychees with the coarsely grated coconut, coconut syrup and the juice of the 2 limes.
  4. Put the mixture in the freezer.
  5. Rinse the blackberries and puree them coarsely with the sugar, apple juice and juice of 1 lime.
  6. Put in the freezer as well.
  7. Use a fork to stir the lychees- and blackberry mixture and scrape the ice crystals loose, every half hour. Repeat 5 times.
  8. Scrape the ice crystals and place layers of lychees and blackberries in a nice glass. Serve with a sprig of mint.
