Quick and easy to make, but absolutely fabulous! These green asparagus salmon rolls are ideal as an entrée or exciting snack.


  • 450 g EAT ME green asparagus
  • 2 EAT ME limes
  • 500 g smoked salmon
  • 3 eggs
  • 1 pinch of salt

Let's get to work

  1. Rinse the green asparagus. Cut the ends (1-2 cm) off the asparagus.
  2. Blanche the asparagus for about 4 minutes in a pan with boiling salted water. Rinse them with cold water.
  3. Boil the eggs for 8 minutes and then put them in streaming cold water. Peel the eggs and rinse until cold. Cut the eggs in wedges.
  4. Wrap a slice of smoked salmon around each green asparagus in such a way so the heads are still visible.
  5. Slice the 2 limes in 8 wedges.
  6. Place the green asparagus with salmon on a platter and decorate with the lime and boiled egg wedges.
