  • Quiche with figs and shiitake mushrooms

  • 3 EAT ME figs
  • 100 g EAT ME shiitake mushrooms
  • 6 semi-dried tomatoes
  • 4 sheets filo pastry
  • 1 tbsp. yoghurt
  • 2 eggs
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. honey
  • 20 ml olive oil
  • pepper & salt

Let's get to work

  1. Preheat the oven to 175 ° C.
  2. Grease a quiche dish with olive oil. Attach two sheets of filo pastry together and brush with olive oil. Place the large sheet into the quiche dish. Do the same with the other two pastry sheets.
  3. Cut the shiitake into slices and fry them briefly in a frying pan.
  4. Cut the figs into wedges and the tomatoes into pieces.
  5. Mix the yoghurt, eggs, balsamic vinegar and honey and add salt and pepper to taste.
  6. Pour the egg mixture into the quiche dish.
  7. Place the fig slices, shiitake mushrooms and tomato on top.
  8. Bake the quiche for 20 minutes until done.
