A lovely lunch or a delicious appetizer.

Ingredients

  • 1 EAT ME avocado
  • 4 eggs
  • 100 g smoked mackerel
  • 1 gherkin
  • 1 tomato
  • 1 shallot
  • 1 tbsp olive oil
  • 25 g butter
  • pepper & salt

Let's get to work

Preparation
  1. Beat the eggs in a bowl.
  2. Bake 2 omelettes in a pan with a piece of butter. Bake the omelettes golden brown on both sides.
  3. Cut the shallot finely. Slice the gherkin, tomato and mackerel in small pieces.
  4. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart.
    Remove the stone with a spoon and scoop the flesh out and cut into small cubes. Mix the avocado pieces,
    the shallot, gherkin, tomato, mackerel and the olive oil together. Season with pepper and salt to taste.
  5. Fill each omelette with the mixture and roll them up.
  6. The omelettes can be served hot or cold.

Tip

These omelette rolls are ideal to serve at a high tea or as an appetizer. Cut the filled omelette rolls into thin slices. These ingredients are enough for 16 appetizers.
