  • Sea bass with kiwi-mangetout salad

The best thing to add to vegetables is fruit! This balances the flavours well and tastes delicious and fresh. Light and healthy in combination with fish.

Ingredients

  • 4 EAT ME kiwi
  • 2 EAT ME limes
  • 4 Sea Bass filets
  • 150 g EAT ME mangetout
  • 100 g carrots
  • 500 g mini potatoes
  • 1 clove garlic
  • 7 tbsp. olive oil
  • 1 tbsp. honey
  • 1 tbsp. mustard
  • pepper & salt

Let's get to work

Preparation
  1. Preheat oven to 200 °C.
  2. Cut the potatoes in quarters and place in an oven dish, add the crushed garlic with 2 tablespoons of olive oil and salt.
  3. Bake the potatoes in the oven for about 20-30 minutes.
  4. Peel the carrots and kiwis and rinse the mangetout.
  5. Cut the mangetout and carrots into thin strips and boil for 3 minutes.
  6. Cut the kiwi into thin strips and mix with the mangetout and carrot.
  7. Heat 1 tablespoon of olive oil in the pan and pat the fish dry and sprinkle with salt.
  8. Bake the fish skin down for 3 minutes, then turn over and bake for another 3 to 4 minutes.
  9. Halve the lime and then squeeze the juice from the fruit. Mix the lime juice together with mustard, honey and olive oil. Season to taste with salt and pepper.
  10. Drizzle the dressing over the salad and serve with the fish and the potatoes.
