Perfect for kids, a high tea or a small snack. Lovely little cupcakes with the fresh taste of the small red currants. You can also make a big cake from the dough.

Ingredients

  • 250 g EAT ME red currants
  • 200 g buckwheat flour
  • 75 g soft butter
  • 250 g quark
  • 6 tbsp. honey
  • 4 eggs
  • 1 tsp. baking powder
  • 1 tsp. vanilla sugar

Let's get to work

Preparation
  1. Preheat oven to 170 °C.
  2. Rinse the red currants and strip the berries off the stalks.
  3. Beat the eggs with the quark, vanilla sugar and honey. Add the butter, then the buckwheat flour and the baking powder and mix well.
  4. Fill the moulds with 2/3 of the dough and place the red currants on top.
  5. Bake the cupcakes in the middle of the oven.
