Kiwi bread is super tasty as a snack. Do you want to make it gluten-free? Then replace the buckwheat flour with almond flour.

Ingredients

Bread
  • 2 EAT ME kiwis
  • 100 g grated coconut
  • 90 g of coconut blossom sugar
  • 4 tbsp. honey
  • 8 eggs
  • 350 g of buckwheat flour
  • 3 tbsp. coconut oil
  • 1 tsp. baking powder
  • 1 tsp. vanilla sugar
  • 1 dab of soft butter for greasing

Clotted cream
  • 4 tbsp. crème fraîche
  • 4 tbsp. mascarpone
  • 1 tsp. icing sugar

Let's get to work

Preparation
  1. Preheat the oven to 150° C.
  2. Mix the eggs, coconut oil, coconut blossom sugar, vanilla sugar and the honey and beat it until light and fluffy.
  3. Then fold the grated coconut, buckwheat flour and baking powder through the egg mixture.
  4. Peel the kiwis and cut into thin slices.
  5. Put the dough in a greased cake tin. Then place the slices of kiwi on top of the dough.
  6. Bake the bread in 60 minutes.
  7. Meanwhile, make the clotted cream by mixing the crème fraîche, mascarpone and icing sugar.
  8. Serve the clotted cream with the bread.
