  • Cranberry soup with mango

A spoom is often served during a long dinner. We think it's more fun to serve a cold cranberry soup in between meals. Of course it is also delicious as an appetizer!


  • 250 g EAT ME cranberries
  • 1 EAT ME mango
  • 2 dl red wine or red port
  • 3 dl orange juice
  • 100 g sugar
  • 100 g mascarpone
  • 1 orange
  • 1 tsp. vanilla sugar
  • ½ tsp. cinnamon
  • 50 g icing sugar

Let's get to work

  1. Place the cranberries with the red wine or port, orange juice, vanilla sugar, sugar and cinnamon in a saucepan and bring to a boil. Gently simmer for 5 minutes.
  2. Puree with a stick mixer and push the cranberry soup through a sieve. Bring the soup to taste with extra sugar or cinnamon.
  3. Allow the soup to cool down for 1 hour.
  4. In the meantime, whisk the mascarpone with the icing sugar and put in the fridge.
  5. Cut the mango along both sides along the stone or use a mango cutter. Now use a melon baller to scoop small balls from the mango.
  6. Rinse the orange and use a vegetable peeler to scrape the orange peel as thin as possible. Slice the zest into thin strips.
  7. Mix half of the strips through the mascarpone and keep the other half
  8. Pour the soup into 4 bowls. Place the mango cubes on top.
  9. Place a scoop of orange mascarpone on each bowl.
  10. Garnish with the orange zest.
