So now and then we feel like a nice spicy vegetarian soup. This is such an easy recipe, you can have this soup prepared and ready to eat in half an hour. Serve with seeds or parsley for an even better taste.

Ingredients

  • 50 g EAT ME organic Ginger
  • 600 g carrots
  • 1 onion
  • 800 ml water
  • 2 dl coconut milk
  • 1 tsp. curry powder
  • 1 clove garlic
  • 2 tbsp. olive oil
  • 15 g parsley

Let's get to work

Preparation
  1. Cut the carrot, onion and garlic into pieces.
  2. Peel the ginger and cut into fine pieces.
  3. Heat olive oil in a pan and fry the onion, garlic and ginger.
  4. Then add the carrots and curry powder and fry briefly.
  5. Add the water and bring to a boil, then add the coconut milk.
  6. Let the soup simmer for 20 minutes.
  7. Use a blender to puree the soup until smooth.
  8. Pour the soup into bowls and garnish with parsley.
