For a delicious snack try yellow pitahaya blinis. Combine freshly baked blinis with cream cheese and the fresh taste of yellow pitahaya.

Ingredients

  • 1 EAT ME yellow pitahaya
  • 5 g EAT ME chives
  • 50 g thinly sliced coppa ham
  • 150 g cream cheese
  • ½ head lollo verde

Blinis

  • 200 g buckwheat flour
  • 2 tsp. baking powder
  • 2 eggs
  • 2.5 dl milk
  • 1 dl. olive oil
  • salt and pepper

Let's get to work

Preparation
  1. Start by making the blinis. Separate the egg yolks from the egg whites and beat the yolks. Place the egg whites in the fridge.
  2. Mix the egg yolks, flour, milk and baking powder with a pinch of salt and pepper until smooth.
  3. Gently fold the egg whites into the batter making sure it remains light and airy.
  4. Heat the olive oil in a frying pan over a medium heat and add 3 to 5 spoonfulls of batter into the pan. Cook on medium heat. Once the batter has solidified, turn them over and cook them on the other side and let the blinis cool down. Repeat until all the batter has been used.
  5. Finely chop the chives and mix together with the cream cheese. Put the cream cheese in a piping bag and make nice tufts of cream cheese on all the blinis.
  6. Rinse the lettuce and drain well. Decorate the blinis with some lettuce leaves.
  7. Then add the slices of ham.
  8. Cut the pitahaya vertically in half and then scoop out the flesh. Then cut the flesh in cubes. Place the cubes on top of the ham.
  9. Use a cocktail stick so that everything stays on top of each other.
