  • Salad with duck breast and cranberries

Salads are often forgotten in the winter because they aren't filling enough for that time of year. However, it is possible to make a winter salad by adding a few wintertime ingredients. Give it a try yourself!



  • 170 g EAT ME cranberries
  • 2 EAT ME pears
  • 350 g duck breast
  • 1 white chicory
  • 1 head radicchio
  • 125 g mixed lettuce
  • 2 oranges
  • 2 tbsp. red wine
  • 75 g sugar
  • 60 g pancetta
  • ½ tsp. cinnamon


  • 1 EAT ME lime
  • 1 orange
  • 2 tbsp. olive oil
  • 1 tbsp. honey
  • 1 tsp. mustard

Let's get to work

  1. Preheat the oven to 180 ° C.
  2. Score the fatty layer of the duck breast. Fry the duck breast without oil or butter in a frying pan. Bake for about 2 minutes on the fatty side first, then turn over and cook for another 2 minutes.
  3. Rinse the lime and grate the zest. Put it in a saucepan together with the red wine, sugar, cinnamon and cranberries and warm it up. Bring to a boil.
  4. Remove immediately as soon as it starts to boil, stirring gently a few more times. Let the cranberries cool down.
  5. Place the slices of pancetta on a baking tray and bake for 10 minutes in the oven until crispy.
  6. In the last 5 minutes of the cooking time, add the duck breast and let it rest.
  7. Juice the orange and the lime and place in a saucepan. Add the honey and mustard and bring to a boil. Let this simmer for about 2 minutes. Leave to cool for 10 minutes then add the olive oil into the dressing, stirring continuously.
  8. Rinse the pears, cut into quarters and remove the core. Cut into slices and put in the dressing.
  9. Remove the orange peel and cut the flesh into wedges. Put it in the dressing.
  10. Remove the stalk and the core of the white chicory and radicchio and rinse them.
  11. Decorate the plates with the radicchio and white chicory leaves. Scatter the mixed lettuce, pear and orange on top. Drizzle the dressing on it and then place the pancetta on top of the salad.
  12. Cut the duck breast into thin slices and place on the salad.
  13. Scatter the cranberries over the salad.
