How about preparing white asparagus? Taste this delicious recipe made with a homemade olive tapenade.


  • 500 g EAT ME white asparagus
  • 5 g EAT ME basil
  • ½ head Lollo verde lettuce
  • 2 cherry tomatoes
  • 100 g pastrami
  • 100 g sliced aged cheese
  • 50 g pitted black olives
  • 25 g semi-dried tomatoes
  • 1 clove garlic
  • 25 g grated Parmesan cheese
  • ½ lemon
  • 1 tsp. sugar
  • knob of butter
  • salt & pepper

Let's get to work

  1. Peel the white asparagus and cut 2 cm from the ends of the asparagus.
  2. Cook the asparagus for 5 minutes in boiling water with salt, 1 teaspoon sugar, and the juice of half a lemon and small knob of butter.
  3. Allow the asparagus to cool in the pan, without draining the water.
  4. Mix the black olives, marinated tomatoes, garlic, Parmesan cheese and basil in a food processor until it is an olive tapenade.
  5. Place 5 asparagus on a plate. Place 4 slices of pastrami and a few slices of aged Dutch cheese on top. Nicely arrange two small towers of olive tapenade next to it. Garnish with cherry tomatoes and leaves of Lollo verde lettuce.
