  • Tuna tataki with edible flowers

Give your starter an extra finishing touch by dressing it with colourful edible flowers. Not only do they make the dish much more attractive, they also add extra flavour to it.


  • 1 EAT ME avocado
  • 1 punnet EAT ME edible flowers
  • 1 punnet shiso purple
  • 1 punnet shiso green
  • 2 boiled beets
  • 300 g fresh tuna
  • 2 tbsp. olive oil



  • 3 tbsp. light soy sauce
  • 1 tbsp. dark soy sauce
  • 1 tsp. honey
  • 2 tbsp. sesame oil
  • 1 tsp. sesame seeds

Let's get to work

  1. Heat the olive oil in a frying pan and fry the tuna on both sides until it turns golden brown. Then let it cool down.
  2. Make the sauce by mixing all the ingredients together.
  3. Cut the beets into very thin slices and put them on the plates as well. Cut the tuna into thin slices. Then put the tuna slices on top.
  4. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone, spoon out the flesh and cut into very thin slices and gently twist to curl them.
  5. Place the avocado curls on the plates.
  6. Decorate the plates with shiso purple, shiso green and the edible flowers.
  7. Sprinkle the tuna with sauce.
