  • Truffle potato salad with avocado

Do you feel like a yummy salad? Then this salad with avocado, lime, truffle potatoes and peas is the perfect choice. Various flavours are combined to make this a flavoursome salad. The creaminess of an avocado, the freshness of a lime and the sweetness of the peas.

Ingredients

  • 2 EAT ME avocados
  • 1 EAT ME lime
  • 15 g EAT ME parsley
  • ½ EAT ME cayenne pepper
  • 400 g truffle potatoes
  • 200 g fresh peas
  • 4 tbsp. olive oil
  • salt and pepper

Let's get to work

Preparation
  1. Bring a pan of water to the boil. Meanwhile, peel the truffle potatoes and cut into cubes of about 1 cm.
  2. Place the cubes into the boiling water and cook them until done in about 7 minutes.
  3. Strain the cooked cubes and rinse with cold water.
  4. Meanwhile, heat another pan with water and blanch the peas until done in about 3 minutes. Strain and rinse with cold water so that they do not cook any further.
  5. Finely cut half a cayenne pepper and the parsley.
  6. Put the truffle potatoes and the peas in a bowl and add the cayenne pepper, parsley and the juice and zest of the lime. Season to taste with salt and pepper.
  7. Mix this well together with 2 tablespoons of olive oil.
  8. Cut the avocados all the way around, going as deep as the stone.
  9. Twist until you can pull the 2 halves apart. Remove the stone with a spoon. Peel the avocado or spoon out the avocado, cut as a fan and place fan-wise on the plates.
  10. Place the potato salad on the plates and season with freshly ground pepper and olive oil.

The potato salad can be prepared well in advance. Add the herbs at the end.
