In the summertime it is great to eat outside. This salad looks and tastes delectable. These three great tropical ingredients make a delicious salad. Absolutely irresistible combined with crunchy chicken.

Ingredients

  • 1 EAT ME papaya
  • 1 EAT ME mango
  • 1 EAT ME coconut
  • 1 EAT ME lime
  • 75 g mixed lettuce
  • 12 cherry tomatoes
  • ½ cucumber
  • 200 g chicken tenderloin
  • 6 tbsp. breadcrumbs
  • 100 ml cooking cream
  • 50 ml olive oil
  • 1 tbsp. cane sugar
  • salt & pepper

Preparation
  1. Peel the papaya and cut in half, use a spoon to remove the seeds and cut the papaya in slices.
  2. Slice the mango along both sides of the seed or use a mango cutter. Cut a few slices in the flesh without cutting through the skin. Also slice in the opposite direction so you get a crosshatch pattern. Use a spoon to remove the cubes from the mango.
  3. Open the coconut by drilling holes in two of the three eyes at the bottom of the fruit. Pour the coconut water in a bowl. Use a hammer to hit all over the coconut until it breaks open. Remove the coconut flesh out of the shell and cut in strips.
  4. Rinse the cherry tomatoes and the cucumber and cut in strips.
  5. Place the chicken in the breadcrumbs and press down well so the tenderloin is completely covered.
  6. Use a deep fryer and fry the chicken at 180°C until golden brown. If you don't want to deep-fry the chicken, bake it in a frying pan with a little oil for six minutes.
  7. Mix the coconut, mango, papaya, cucumber, cherry tomatoes and the lettuce gently. Place the fried chicken on top.
  8. Add the olive oil, the coconut water, cooking cream, cane sugar, lime juice, pepper and salt together. Use a blender or stick mixer to mix all the ingredients.
  9. Serve the dressing separately so everyone can add some to their own taste.
