  • Sweet potato toast with baked figs

Ingredients

  • 2 EAT ME sweet potatoes
  • 6 EAT ME figs
  • 6 slices of goat's cheese
  • 6 leaves lollo verde
  • 6 tsp honey
  • 100 ml olive oil

Let's get to work

Preparation
  1. Wash the sweet potatoes and cut into 6 equal slices.
  2. Bring a pan with water to a boil. Then cook the slices of sweet potato for about 3 minutes. Then drain in a sieve.
  3. Rinse the lettuce.
  4. Take a piece of aluminium foil and grease it with olive oil and place it on the barbecue. Halve the figs and place them on the aluminium foil.
  5. Coat the slices of sweet potato with olive oil and keep turning them over on the barbecue till they are done.
  6. Then place the slices of sweet potato on a plate or platter. Place the slices of goat cheese on top of the sweet potato. Put lettuce leaves on top of the goat cheese.
  7. Place the figs on top of the lettuce leaves. Spoon a little honey on the figs and finally put the second slice of sweet potato on the figs.
  8. Put a cocktail stick or skewer in it, so that everything stays together.
