Want to make a rich and filling soup, then this sweet potato soup is perfect. A nice hearty soup with a sweet touch.


  • 1 kg EAT ME sweet potatoes
  • 200 g carrots
  • 2 red bell peppers
  • 2 shallots
  • 1 clove of garlic
  • 2 tbsp. olive oil
  • 1 L vegetable stock

Let's get to work

  1. Preheat oven to 200 °C.
  2. Place the bell peppers, in one piece, on a baking tray and bake in the oven for about 12 minutes.
  3. Peel the sweet potatoes and the carrots and cut into chunks.
  4. Finely chop the shallots.
  5. Crush the garlic with a garlic press.
  6. Heat olive oil in a frying pan and fry the garlic and shallots. Add the sweet potatoes and carrots.
  7. Bake for about 3 minutes, and deglaze with vegetable stock.
  8. Bring to the boil with the lid left on the pan. Turn down the heat.
  9. Take the bell peppers from the oven and remove the skin and seeds. Cut the flesh into thin strips.
  10. Puree the soup after 20 minutes with a stick mixer until smooth.
  11. Pour the soup in bowls and arrange the roasted bell peppers on top.
