  • Sweet potato salad with mango

The sweet flavours in this salad set the tone and is a great dish to have at any time! Add colour to your table with this salad.


  • 500 g EAT ME sweet potatoes
  • 1 EAT ME mango
  • ½ EAT ME lime
  • 150 g smoked chicken fillet
  • 1 tbsp whole grain mustard
  • 1 tbsp honey
  • 4 tbsp olive oil
  • pepper & salt

Let's get to work

  1. Peel and rinse the sweet potatoes and slice into nice thin strips. Cook the strips in salted water for about 4 minutes.
  2. Cut the mango along the stone or use a mango cutter. Slice the seedless flesh a few times to create a crosshatch pattern, without touching the skin. Then scoop the cubes of flesh from the skin.
  3. Slice the smoked chicken fillet in strips also.
  4. Squeeze the juice from the lime and make the dressing by combining the juice with the whole grain mustard,
    honey and olive oil. Add pepper and salt to taste.
  5. Put the sweet potato strips, mango and smoked chicken all together in a bowl and add the dressing.
