Vegetables in a muffin? That may sound crazy, but sweet potato has a sweet taste and is ideal to use in a sweet dish. Sweet potato fills very well and this muffin is nutritious too. Great snack at work or when you are on the go.


  • 600 g EAT ME organic sweet potatoes
  • 6 eggs
  • 60 g soft butter and a bit extra for greasing
  • 300 g almond flour
  • 75 g coconut blossom sugar
  • ½ tsp. five spice powder
  • 2 tsp. baking powder

Let's get to work

  1. Preheat the oven to 180 °C.
  2. Peel and wash the sweet potatoes. Cook for about 15 minutes in plenty of salt water until done. Mash the sweet potatoes coarsely.
  3. Make the batter by mixing the eggs, coconut blossom sugar and butter and whisk it slightly.
  4. Then mix the mashed sweet potatoes, almond flour, baking powder and five spice powder into the batter.
  5. Grease a muffin tin with butter and fill with the mixture.
  6. Bake the muffins in about 25 to 30 minutes until done.
  7. Let the muffins cool down.
