Falafel is a delicious vegetable alternative for meat or fish. Easy to make and tastes delicious.

Ingredients

  • 500 g EAT ME sweet potato
  • 15 g EAT ME basil
  • 10 g EAT ME parsley
  • 300 g chick peas (can)
  • 75 g cashew nuts
  • 1 cucumber
  • 1 carrot
  • 1 egg
  • 1 clove garlic
  • 2 dl. olive oil
  • salt and pepper
  • 4 whole wheat pita breads

Let's get to work

Preparation
  1. Preheat the oven to 160° C
  2. Peel the sweet potatoes and cut into chunks.
  3. Put the pieces of sweet potato on a baking tray and drizzle with olive oil and sprinkle with sea salt.
  4. Crush the garlic with a garlic press and put on the sweet potato.
  5. Bake the sweet potato in 30 minutes until done and let them cool down.
  6. Drain the chickpeas in a sieve.
  7. Puree the cashew nuts, chickpeas and basil in a food processor until it is a smooth paste.
  8. Mash the sweet potato and mix with the chickpea puree.
  9. Separate the yolk from the egg and add to the sweet potato mixture.
  10. Rinse the parsley and chop finely. Mix together with the sweet potato mixture, then season with salt and pepper.
  11. Let it cool down in the fridge.
  12. Use damp hands to make small balls from this mixture. Flatten to make a falafel shape.
  13. Heat olive oil in a pan. Bake the sweet potato falafel golden brown.
  14. Peel the cucumber and the carrot.
  15. Heat the pita bread in a toaster.
  16. Serve the falafel in a pita bread with hummus and little pieces of cucumber and carrot.
