How about serving something delicious with your cup of tea? This cake made with sweet potato is surprisingly tasty. It's not just sweet because of the potato but this cake has a spicy taste to it as well.

Ingredients

  • 500 g EAT ME sweet potato
  • 200 g butter
  • 200 g sugar
  • 4 eggs
  • 200 g flour
  • 1 tsp. baking powder
  • 2 tbsp. brown sugar
  • 1 pinch of cinnamon
  • 1 pinch of five spices powder
  • 1 pinch of salt

Let's get to work

Preparation
  1. Preheat the oven to 150 °C.
  2. Peel and rinse the sweet potatoes. Cook in salted boiling water for about 15 minutes. Puree the potatoes until smooth.
  3. Mix the butter and sugar together and whisk the eggs through, one by one. Mix until the mixture is light and fluffy.
  4. Fold the flour and the baking powder into the dough.
  5. Then add the pureed sweet potatoes, cinnamon, five spices powder and the brown sugar.
  6. Pour the dough in a cake tin and bake the cake for about 60 to 70 minutes until done.
