Sweet couscous

  • 100 g soaked white raisins
  • 200 g whole wheat couscous
  • 125 g kiwi berries

  • 1 apple
  • 1 pear
  • 100 g walnuts
  • 50 g pistachio nuts
  • 1 tbsp cinnamon
  • 2 tbsp agave syrup or honey
  • Salt

Preparation method

  1. Soak the raisins in warm water. Cook the couscous according to the instructions on the package.
  2. Halve the kiwi berries. Strip the redcurrant from the stalks. Scrub the lime, zest the green skin and squeeze the juice. Cut the apple and pear into quarters, remove the core and cut the flesh into cubes.
  3. Roughly chop the walnuts and pistachios. Stir the couscous with a fork and put in a large bowl. Mix the raisins, kiwi berries, red berries, apple, pear, walnuts and pistachios through the couscous. Season with lime juice, zest, cinnamon, agave syrup and salt.

Variation tip: Add a touch of freshness with some finely sliced mint leaves.
