  • Blinis with kiwi and mango

This recipe will turn your blinis into a sweet party snack. Enjoy the beautiful colours and lovely taste of the mango and kiwi. A real summer treat!

Ingredients

  • 200 g EAT ME strawberries
  • 4 EAT ME kiwis
  • 1 EAT ME mango
  • 1 EAT ME lime
  • 2 tbsp sugar
  • 2 tbsp water
  • 9 tbsp crème fraîche
  • 200 ml cream
  • 30 g icing sugar
  • 100 g flour
  • 1 tsp baking powder
  • 120 ml milk
  • 1 egg
  • 1 tsp vanilla sugar
  • 1 tbsp sugar
  • Piece of butter

Let's get to work

Preparation
  1. Start by making the strawberry sauce. Remove the leaves from the strawberries.
    Put the strawberries together with the water and the sugar in a saucepan and bring to the boil.
  2. Simmer for 3 minutes on a low heat.
  3. Puree the strawberries with a stick mixer and let it cool down. Place the saucepan in a container
    or sink which you have filled with cold water, for about 10 minutes. Then put it into the fridge.
    The strawberry sauce needs to be really cold.
  4. Halve the lime and squeeze the juice out.
  5. In the meantime make the batter for the blinis. Crack the egg and just use the egg yolk.
    Mix it together with the lime juice, vanilla sugar and sugar.
  6. In a separate bowl, mix the milk with the flour on a medium setting and add the lime-egg yolk mixture.
    Mix until smooth on a high setting.
  7. Beat the egg white separately until stiff. Gently fold this through the batter.
  8. Whip the cream with a mixer at the highest setting until it has a yoghurt like texture.
  9. Add the icing sugar and crème fraiche and mix until you have a smooth cream.
  10. Melt a piece of butter in a frying pan. You can put 2 tablespoons of batter in a round cookie cutter
    or you can make your own shape. Fry the blinis on both sides until golden brown, about 2 minutes in total.
    Don't turn the blinis more than once. Allow to cool.
  11. In the meantime peel the kiwis. Cut the mango along the stone or use a mango cutter.
    Slice the seedless flesh a few times to create a crosshatch pattern, without touching the skin.
    Then scoop the cubes of flesh from the skin.
  12. Place a blini on a plate and spread the cream on it. Add a few pieces of kiwi and mango and pour the strawberry sauce over the top. Cover this with another blini and repeat.
