Did you know that green mini asparagus and strawberries are a delicious combination? Green mini asparagus have a very subtle flavour and as such they taste really great in a salad. This summer salad is a guaranteed hit.

Ingredients

  • 125 g EAT ME mini green asparagus
  • 1 EAT ME avocado
  • 150 g EAT ME strawberries
  • 100 g raw ham
  • 50 g pecans
  • 75 g mache corn salad
  • salt
  • balsamic syrup

Let's get to work

Preparation
  1. Bring plenty of salt water to the boil. Blanch the green mini asparagus for 2 minutes and then rinse with cold water.
  2. Rinse the strawberries and remove the green crown. Slice them in half.
  3. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone with a spoon. Peel the avocado or scoop the flesh out and cut into cubes.
  4. Now place the corn salad on 4 plates or in one large bowl. Cut the green mini asparagus into two or three pieces and arrange on top of the salad. Add the ham and strawberries.
  5. Chop the pecans coarsely and sprinkle over the salad.
  6. Sprinkle to taste with balsamic syrup.
