  • Stuffed tomatoes with mangetout

Nice and easy to make, with the children for example. These stuffed tomatoes can either be eaten as a healthy snack or served as an entree. Or you can add it to a fish-or meat dish as a vegetable garnish.

Ingredients

  • 100 g EAT ME mangetout
  • 2 EAT ME sweet corn cobs
  • 3 mini stalks broccoli
  • 3 cherry tomatoes

Let's get to work

Preparation
  1. Pre heat oven to 150°C.
  2. Rinse the broccoli.
  3. Blanche both the mangetout and the broccoli in salted boiling water in 4 minutes
    (preferably not together, so they keep their colour).
  4. Prepare the sweetcorn according to the instructions on the packaging in the microwave.
    Remove the kernels from the cobs.
  5. Remove the tops of the cherry tomatoes and hollow them out with a teaspoon.
  6. Put about 6 to 7 mangetout in each tomato. Fill the rest of the tomatoes with a small spoon
    full of corn kernels and 1 small broccoli stalk.
  7. Bake the stuffed tomatoes for 7 minutes in the oven.
