A great way to use jalapeño chillies in a recipe, stuffed with a lovely creamy cheese ragout, and topped with melted cheese. This sensational taste will really amaze you.

Ingredients

  • 3 EAT ME jalapeño chillies
  • 30 g grated mature cheese
  • 10 g flour
  • 8 g butter
  • ¼ onion
  • 25 ml cream
  • 50 ml milk
  • 1 pinch of nutmeg
  • pepper & salt

Let's get to work

Preparation
  1. Rinse the chillies and cut them in half. Remove the seeds.
  2. Chop the onion finely.
  3. Place butter into a frying pan and sauté the onion without discolouring the butter.
    Turn the heat down low after 3 minutes.
  4. Add the flour. Mix the flour and the butter well for about 4 minutes on a low heat.
  5. Add the milk while stirring and keep stirring it well.
  6. Mix the cream through and stir until you have a thick smooth ragout without lumps.
  7. Finally add 20 grams of cheese to the ragout.
  8. Season with pepper, salt and a pinch of nutmeg.
  9. Leave the ragout to cool down until it is at room temperature.
    Than spread the ragout in a flat dish and leave to cool in the fridge for another 20 minutes.
  10. Preheat oven to 220°C.
  11. Fill the halved jalapeño chillies with the ragout.
  12. Cover with the remaining cheese and pop into the oven for 10 to 12 minutes.
