Get into that great summery feeling with this delicious strawberry tart. Using almond flour and coconut makes this cake deliciously light and airy. The cake is gluten free and absolutely everyone can enjoy this cake.



  • 150 g almond flour
  • 100 g butter
  • 100 caster sugar
  • 1 egg yolk


  • 300 g EAT ME strawberries
  • 75 g pistachios
  • 50 g grated coconut
  • 45 g sugar
  • 15 g butter
  • 1 egg yolk

Let's get to work

  1. Preheat the oven to 170 ° C. Grease the tart pan with butter.
  2. Mix the caster sugar, egg yolk and butter, then add the almond flour. Knead until you have a nice dough.
  3. Press the dough in the cake pan and cover the bottom and the sides. Bake it in the oven for about 10 minutes.
  4. Meanwhile, make the filling. Mix the butter, egg yolk and sugar. Then add the grated coconut and use a spatula to get a crumbly consistency.
  5. Rinse the strawberries and remove the stems. Halve the strawberries and arrange nicely on the baked tart.
  6. Then spread the filling over the strawberries and bake for 5 minutes in the oven.
  7. Remove the strawberry tart from the oven and sprinkle the pistachios on it.
  8. Bake for another 4 minutes. Leave the tart in the pan and allow to cool on a rack.
