Sweet and juicy strawberries are delicious in combination with chocolate in this strawberry brownie cake recipe.


Chocolate brownie:

  • 360 g white caster sugar
  • 320 g butter
  • 12 g vanilla sugar
  • 400 g dark chocolate
  • 375 g flour
  • 2 g baking powder
  • 4 eggs
  • 50 dl water
  • Pinch of salt


  • 400 g EAT ME strawberries
  • 1 EAT ME lime
  • 6 sprigs EAT ME mint
  • 10 EAT ME edible flowers
  • 400 g mascarpone
  • 100 ml cream
  • 3 tsp. icing sugar

Let's get to work

  1. Preheat the oven to 180 °C.
  2. Bring the caster sugar, butter, water and vanilla sugar to the boil in a saucepan. Stir well.
  3. Add the chocolate and let it melt. Remove the pan from the heat, add the eggs and use a whisk to stir well.
  4. Add the sifted flour, salt and baking powder to the mixture. Stir well.
  5. Grease a baking tin with a little butter and pour the chocolate brownie mixture into the baking tin.
  6. Bake the brownie cake in the oven for 20 minutes.
  7. Rinse the strawberries, remove the crowns and cut them in four segments.
  8. Gently beat the mascarpone, cream, lime juice in a food processor.
  9. Remove the cake from the oven and leave to cool.
  10. Spread the mascarpone over the brownie cake and add the strawberries, edible flowers and sprigs of mint.
