  • Spring rolls with sugar snaps

How about a healthy snack? Fill rice papers with different kinds of vegetables, this way you will quickly use your recommended dietary allowances.

Ingredients

  • 150 g EAT ME sugar snaps
  • 1 EAT ME cayenne pepper
  • ¼ red bell pepper
  • ¼ yellow bell pepper
  • 25 g bean sprouts
  • 2 spring onions
  • 1 clove of garlic
  • 1 shallot
  • 50 g rice noodles
  • 15 rice paper
  • 3 tbsp. Hoisin sauce
  • ½ tbsp. sesame seed
  • 2 tbsp. soya sauce
  • 1 tbsp. honey

Let's get to work

Preparation
  1. Prepare the rice noodles according to the instructions on the packet and rinse in cold water.
  2. Cut the red and yellow bell pepper and 1 spring onion in thin strips. Slice 1 spring onion in small rings and set aside.
  3. Rinse the sugar snaps and bean sprouts
  4. Mix the rice noodles, the bean sprouts, the sugar snaps, the yellow and red bell pepper and the spring onion together.
  5. Fill a bowl with warm water. Dip a rice paper into it and remove after a few seconds. Place the rice paper on a plate.
  6. Place some rice noodles and some vegetables in the middle of the rice paper. Fold the sides inward then roll the paper into a tight roll.
  7. Then make the sauce, cut a cayenne pepper in half, remove the seeds and chop very fine. Crush the garlic using the garlic press and chop the shallot.
  8. Mix the cayenne pepper, the garlic, the shallot, the sesame seeds, the soya sauce, the Hoisin sauce, the honey and the finely chopped spring onion into a sauce. Serve the sauce along with the spring rolls.
