Looking for the exotic variety of the usual carpaccio recipe? Then this is the perfect entrée for you. The passion fruit dressing is delicious combined with the smoked duck breast and sweet mango.


  • 2 EAT ME mangos
  • 150 g smoked duck breast (slices)
  • 40 g mixed green salad
  • 20 g pine nuts

For the dressing:
  • 4 EAT ME passion fruit
  • 1 tbsp. raspberry vinegar
  • 2 tbsp. honey
  • 2 tsp olive oil
  • Pepper & salt

Let's get to work

  1. Start making the dressing first. Slice the passionfruit in half and use a spoon to take out the jelly-like flesh and put in a bowl.
  2. Add the raspberry vinegar and the honey to the passion fruit flesh and gently mix it together using a whisk. Keep stirring and add the olive oil to the dressing. Add salt and pepper to taste if you wish.
  3. Slice the mango along both sides of the seed or use a mango cutter. Cut a few slices in the flesh without cutting through the skin. Use a spoon to remove the slices from the mango.
  4. Roast the pine nuts in a dry frying pan until they are golden brown.
  5. Decorate by alternately placing a slice of mango and a slice of smoked duck breast, around the plate. Decorate each plate with some mixed green salad.
  6. Pour as much as you like of the dressing on top of the salad. Sprinkle the pine nuts on top.
