Today is the day for a Shakshuka! Originally Shakshuka is a one-pot dish from the Middle East. Or else, a dish with spicy tomato sauce and eggs. We have made a different variation, using sweet potato and avocado.

Ingredients

  • 2 EAT ME avocados
  • 5 g of EAT ME basil
  • 2 EAT ME sweet potatoes
  • 100 g onions
  • 1 red bell pepper
  • 300 g tomatoes
  • 1 clove garlic
  • 2 tbsp. olive oil
  • 2 tbsp. tomato puree
  • 125 g mozzarella
  • 1 tbsp. paprika powder
  • ½ L water
  • 4 eggs
  • 2 spring onions
  • salt & pepper

Let's get to work

Preparation
  1. Preheat the oven to 180 °C.
  2. Clean the onion, garlic and red pepper and cut into large pieces. Peel the sweet potato and cut into large pieces.
  3. Heat the olive oil in a large pan and add the vegetables.
  4. Rinse and cut the tomatoes coarsely and add them to the vegetables in the pan.
  5. Add the tomato puree and the paprika powder to the vegetables in the pan and let it cook.
  6. Then pour in the water and bring the sauce to the boil. Let the sauce simmer for 10 minutes.
  7. Remove the pan from the heat and puree the vegetables with a stick mixer until smooth.
  8. Season the sauce to taste with salt and pepper.
  9. Pour the sauce into a large oven dish. Break the 4 eggs into the dish and put pieces of mozzarella on top.
  10. Put the dish in the oven for about 25 minutes.
  11. Then remove the dish from the oven.
  12. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone with a spoon. Peel the avocado or scoop the flesh out. Cut the flesh into thin slices and make a fan. Place the two fans on the sauce.
  13. Finely slice the spring onions and decorate the dish.

Tip

Eat the Shakshuka with bread rolls or French bread.
