  • Salmon fillet with mango avocado salsa

Ingredients

  • 1 EAT ME mango
  • 2 EAT ME avocados
  • 1 EAT ME lime
  • 1 EAT ME cayenne pepper
  • ½ red bell pepper
  • 1 red onion
  • 4 pieces of salmon fillet
  • 2 tbsp. olive oil
  • salt

Let's get to work

Preparation
  1. Cut the mango along both sides of the stone or use a mango slicer. Then cut some strips in the seedless flesh, without cutting through the skin. Also slice in the opposite direction so you get a crosshatch pattern. Spoon the cubes from the mango.
  2. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone with a spoon. Spoon the flesh out of the avocado into a bowl.
  3. Wash the cayenne pepper, cut in half and remove the seeds. Slice half of the cayenne pepper very finely.
  4. Cut the pickle, red onion, bell pepper into small cubes.
  5. Put all the fruit and vegetables in a mixing bowl and add the olive oil. Squeeze the lime over the mixture. Season with salt. Mix all ingredients together.
  6. Take four pieces of aluminium foil.
  7. Place the 4 salmon pieces on top and equally divide the salsa on top.
  8. Wrap the salmon into little packets.
  9. Put the packets on the barbecue for about 10 minutes.
